The salty cheese in this recipe is a great combination with the sweet honey. If you can get hold of thyme honey, that would be great here, but plain runny honey with thyme leaves is more than sufficient. A scrap of parma ham on top would be a welcome addition for meat eaters.
Makes 24 canapés
24 small crackers or crispbreads
100g creamy goats cheese (Ziegenfrischkäse)
a couple of sprigs of thyme
2 tsps runny honey
(optional: two slices of parma ham)
Lay out the crackers and spread a little goats cheese on each. Drizzle over the honey and scatter over the thyme leaves. If using the parma ham, cut each slice into 12 strips, roughly roll up each strip and top each cracker with a roll of ham.
